Post docs, like everywhere, are not TT jobs, an assistant professor may or may not be (keep in mind, though, that TT in the German-speaking countries is often something different than in the US). The former comes with little to no teaching and zero admin, the latter has both, they are professorial jobs and come with professorial obligations (although slightly modified to focus more on research). Salarywise they should be pretty comparable, although the former are often funded by outside grant money which may more easily dry up than the government money that assistant professors are typically funded with. If you are young and want to get research done, the former may not be the worse option, unless the professor you work with has a reputation for exploitation (assistant profs are slightly less likely to be exploited, as they are technically professors).
